TECHNICAL SPECIFICATIONS

NAME: FRITO MALLORQUIN

It is a typical and traditional dish from Majorca that combines seasonal vegetables with pork. Actually is also made of fish or sepia, but the traditional recipe is as follows:

INGREDIENTS FOR 6 PEOPLE:

300 g of bacon
250 g of lean pork
250 g of liver
300 g of pork chop
1 kg red peppers
1 kg potatoes

1 bunch scallions or fried
6 tablespoons olive oil
garlic, chilli, bay leaf, salt and pepper

PREPARATION

Cut the meat into medium size pieces and season. Fry the pieces separately on a little hot oil until they got golden brown, drain and set them aside in a clay pot.
In the same oil saute onions, with chopped red pepper, bay leaf and pepper. Separately, fry in clean oil potatoes diced very small.
Join in a saucepan all ingredients, put a pinch of salt and pepper and serve hot.
