NAME: PORK TENDERLOIN WITH CABBAGE

The loin with cabbage Majorcan style is an exquisite dish of pork wrapped in cabbage leaves, with the added flavor of the traditional sobrassada and the Majorcan sausage ‘’butifarrón’’

INGREDIENTS FOR 6 PEOPLE:
12 loin steaks
250 g of raisins
40 g of pine nuts
1 large cabbage
2 onions
2 tomatoes
8 or 9 bits of sobrassada
8 or 9 bits of Majorcan sausage ‘’butifarrón’’
Olive oil, salt and pepper

PREPARATION:

Separate the cabbage leaves, pick the 12 best and biggest and  place them into a bowl with boiling water  to make them manageable.
After a few minutes, remove them and place them on the desk. In the center of each leaf put a rump steak, a piece of sobrassada and a piece of Majorcan sausage ‘’butifarrón’’.
Season with salt and pepper, and wrap and tie the package with the help of a kitchen string to keep the shape.
When we have the twelve parcels, fry them lightly in a skillet with olive oil, and then place them in a casserole.
In the same oil, saute the chopped onion and once browned, add the grated tomato, pine nuts, raisins and the rest of cabbage cut into very small pieces.
After a few minutes incorporate the packages back, covering them with water and drying the assembly for 40 minutes.
