TECHNICAL SPECIFICATIONS

NAME: TUMBET

The tumbet is a typical Majorcan dish made ​​with seasonal vegetables and that usually is accompanied with meat or fish.

 

INGREDIENTS FOR 6 PEOPLE:

4 eggplants
4 potatoes
4 green peppers
1 onion
1 kg and 1/2 of mature tomatoes
Salt, extra virgin olive oil.

 

PREPARATION:

Cut the eggplant into slices and leave them 5-10 minutes in salt to remove bitterness.

Thoroughly washed, dried and passed through a little flour, you must fry and book them.

Peel the potatoes. Cut into slices 0.5 cm thick. Fry, salt them and reserve.

Cut the peppers into strips the width of 1.5 cm, fry and set aside.

In the same oil, fry the chopped onion and then add the chopped tomatoes.

After a few minutes, squash the tomatoes with a fork. The sauce should not be liquid.

In a baking pan, place all ingredients you have booked in layers.

First add the tomato sauce, over it a layer of fried peppers, another layer of sauce, a layer of potatoes, more sauce, a layer of eggplant and then another tomato sauce.
